I belive the term might be "loading angle." In other words, at what angle would it be unsafe for a tractor trailing to be unloading or loading
It would depend on the Center of Gravity, CG.The higher the CG the more likely to tip over.

The fifth wheel has an articulating rod that runs laterally. As the combination’s angle approaches 90 degrees, the combination becomes less stable. For any more than 45 degrees, I’d consider cranking down the landing gear to stabilize the combination.
