I’ve considered a 130/80 (stock), a 130/90, a little taller, is that the largest tire that will go on the bike?

I personally would go back with the stock size. Reason being the people who made the bike probably have more knowledge on the bike than you and I and put that size tire on it stock for a reason. I don’t see any reason to go with a bigger tire.

How would a typical soda expand under freezing temperatures compared to water, without actually doing the experiment in my freezer?

soda has more air then water so the pressure inside is stronger
